Cannabis Infused Strawberry Shortcake


Celebrating National Strawberry Shortcake Day by adding a little infused flair to a fan favorite.

What You’ll Need
3 Tbsp of granulated sugar
1 1/2 Tbsp of baking powder
3 cups of all-purpose flour
3/4 teaspoon of salt
1 1/2 teaspoons of vanilla extract
12 Tbsp of cold cannabis infused butter (cut into small pieces)
1 1/2 cups of heavy cream
Roughly 6 pounds of fresh strawberries
Whipping cream
1/2 cup sugar
Teaspoon of sugar

Getting Started
Preheat oven to 425 F / 220 C
First mix dry ingredients (flour, sugar, baking powder and salt) in large bowl, mix evenly
Add the cannabis infused butter and rub the butter through the dry ingredient mix so that there are small balls of butter throughout the mix
Mix the cream and vanilla (extract or essence)
Next, add the cream mix to the large bowl by making a well and filling it with the cream mix
Create dough by mixing the dry ingredients. Result is a thick mixture make sure all has been moistened to avoid small dry patches when its cooked
Kneed the dough then roll it into a ball (make sure not to over kneed dough)
On a floured surface place the dough and make a 8′ x 20′ square
Next add dough to a baking sheet, refrigerate for at least 20 minutes covered in plastic wrap. After dough is chilled cut into 9 even pieces
Evenly place the 9 pieces on baking tray place in preheated oven cook for 15 – 20 minutes until they turn golden brown

The Filler
Its time to make the whipped cream to top your strawberry shortcake
After washing the strawberries take off stems and leaves
Slice the strawberries (can be sliced thick, thin or even finely diced)
Mix the sugar with the strawberries let sit for 20 minutes
Pick your poison serve as is or mix strawberry mixture further
Take the cold whipping cream and add to a chilled bowl
Next, beat briskly until the cream starts to increase in size and become firmer
Add the vanilla and the sugar and finish beating, remember not to over beat

Now its time to put your masterpiece together: on a plate start layering the biscuit adding cream then spoon over the strawberry mixture
Stack as many as you desire then just drizzle the strawberry mix down the sides
